A Recipe From My Family to Yours: Grilled Chicken with Persian Salad

If you know me, you know that my family is so important.

My parents immigrated here, and watching them build a life from scratch taught me dedication, resilience, and the importance of quality time together. They taught me what it means to show up, and keep going — and I still carry that with me today. 

Now I have four boys, and I think about the lessons I’m passing on to my own family.

I talk all the time about commitment, consistency, and continuity. 

But those three words aren’t just something that applies to skincare — they’re a guiding compass and philosophy for my life. The willingness to show up every day, to work hard, to not abandon the process before it has a chance to reward you. I’ve seen this work for me in every aspect of my life: school, medicine, building a practice, KaramMD. This philosophy has never failed me, and it’s something very valuable I can pass on to my boys - and all of you.


How Food Has Connected My Family for Generations

And in addition to work ethic, I focus a lot on health, wellness, longevity, and self-care — which honestly took becoming a father to fully appreciate. I take better care of my body now than I ever did before I had kids. 

As a family, we meal-plan and cook together. I play tennis with my boys as one of the ways I exercise and move my body daily, and I treat wellness activities as a non-negotiable.

In our house we focus on whole, nutrient-dense foods that fuel the body inside and out, but that doesn’t mean we sacrifice on taste. Food can be both delicious and nourishing. This is something I have understood more and more as I get older, and has now been engrained as an important part of our family philosophy.

One of the ways my family passed their culture down to me was through food.

The traditional Persian dishes I watched my family prepare when I was young, are the same ones I still make today. The moment I smell them cooking, I’m immediately back in those memories.

This Grilled Chicken with Persian Salad is one of those recipes. 

It’s a traditional dish from my family, one of my absolute favorites. I shared it in our holiday book last year as one of the recipes most meaningful to me, and so many of you reached out after that. So it felt right to share it here properly.

This is a staple especially when our parents come over. The kids love it. It’s healthy. And man, it’s good, especially over coals. There’s something about that char on the chicken paired with the coolness of the Persian salad that I don’t think I’ll ever get tired of.

An Important Part of How We Take Care of Ourselves

In my line of work, I think a lot about the relationship between what we eat, how we feel, and truthfully, how we look, because this plays a role in our confidence in the world.

Skin health starts well before any product touches your face. 

It starts with hydration, sleep, stress, and the quality of whole foods you’re eating every day.

This meal checks a lot of those boxes naturally. 

  • Chicken thighs are a clean, high-quality protein that supports muscle repair and keeps you full without weighing you down.
  • The salad — cucumbers, plum tomatoes, red onion, lemon, olive oil — is loaded with water-rich vegetables and healthy fats that support your skin from the inside.
  • Greek yogurt brings in the kind of probiotics that your gut, and by extension your skin, will thank you for.

Like all of my recipes, I’m not sharing this because it’s a “health recipe.”

I’m sharing it because it’s delicious, and it happens to be exactly the kind of nourishing, whole-ingredient meal that your body responds well to. 

This is an example of what real, sustainable healthy eating actually looks like in practice.

Grilled Chicken with Persian Salad

Prep Time: 20 minutes | Cook Time: 25 minutes | Serves: 4–6

Main Ingredients
  • 6–8 chicken thighs
  • 1½ tsp salt
  • ½ tsp pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp chili or cayenne powder
Salad Ingredients
  • 2 cucumbers, cut into chunks
  • 4 plum tomatoes, roughly cut
  • ½ red onion, thinly sliced
  • 1 lemon
  • ½ tbsp olive oil
  • 1 cup Greek Yogurt
  • Salt to taste
Optional
  • Lavash bread

Instructions

  1. Heat coal or gas grill.
  2. In a small bowl, mix together the spices.
  3. Rub spices over chicken, and grill chicken over medium heat until cooked through.
  4. Prepare salad, tossing together cucumbers, tomatoes, onion, and lemon juice, and olive oil, and refrigerate.
  5. Mix Greek yogurt with juice of ½ lemon and a pinch of salt.

Arrange salad and yogurt on a platter next to grilled chicken, add bread for dipping.


My Method:
  • If you can cook this over a real wood or charcoal grill, do it. That smoke makes the difference. The char on the skin with the cool, bright crunch of the salad is the combination that makes this dish what it is.
  • For the salad, I usually make it ahead, because it actually gets better as it sits and the flavors come together.
  • The yogurt sauce keeps well in the fridge overnight.
  • If you have friends or family who aren’t into spice, pull their pieces before the full rub — the chicken is still great with just salt, pepper, and a little paprika.

I thought this was the perfect recipe to share again this summer, and especially as we have a long holiday weekend ahead of us. One where many people get outdoors to grill, enjoying a home cooked meal on a warm summer night, shared amongst friends and family.

This is the kind of meal I make when the people I love are coming over. 

Simple ingredients, minimal cleanup, and everyone leaves the table happy. 

That, to me, is what a healthy lifestyle actually looks like - nourishing and filling in every sense of the word.
