Every Sunday, my wife Neda and I make a batch of these cookies. Then, each morning, I grab one on my way to the office for my mid-day snack before heading into the operating room... and I've been doing that for years.

The foods you eat don't just fuel your day, they build your body, sustain your energy, and the results of eating well compound over time. These cookies are proof that incorporating clean, whole foods doesn't have to be complicated, and can still be a delicious, nutritious treat.

This chocolate protein cookie is packed with ingredients that get me through hours of surgery without a crash. They keep my focus steady, and, as a bonus, support the very thing I spend my days working on: healthy, resilient skin.

I've been asked about these cookies more times than I can count. So here they are: my real, everyday recipe for our easy chocolate protein cookies.

No complicated prep, no specialty ingredients you can't find at a regular grocery store. Just nutrient-dense, whole-food fuel that works.

My Go-To Daily Chocolate Protein Cookie

Before we get to the recipe, it's worth pausing on why this even matters for skin health—because the connection is more direct than most people realize.

Your skin is the body's largest organ, and it's constantly regenerating. That process requires raw materials: protein for collagen synthesis, healthy fats to maintain the skin barrier, antioxidants to defend against environmental damage, and stable blood sugar to prevent the kind of chronic inflammation that accelerates aging.

Most people think of skincare as something you apply. But what you eat is the foundation everything else is built on. Topical ingredients are supporting your skin on the outside, but they work best when your body also has what it needs from the inside.

Why These Cookies Are Good for Your Skin

These cookies aren't designed to be a "health food" in the trendy sense. They're designed to deliver real nutritional value efficiently. Here's what each key ingredient is doing:

  • Almond butter — Rich in vitamin E and healthy monounsaturated fats, both of which support skin hydration and barrier function
  • Walnuts — One of the best plant-based sources of omega-3 fatty acids, which reduce inflammation and help maintain skin elasticity
  • Dark chocolate chips — Packed with flavonoids and antioxidants that can actually help protect against oxidative stress and support collagen integrity
  • Protein powder — Provides the amino acids your body needs for collagen production and maintenance, keeping skin firm over time
  • Bananas and oats — Offer complex carbohydrates and fiber that keep blood sugar stable, which matters because glucose spikes promote glycation—a process that degrades collagen and elastin
  • Coconut oil — Provides medium-chain fatty acids that are quickly converted to energy and have anti-inflammatory properties
  • Almond flour — A gluten-free alternative that adds healthy fats and keeps the texture satisfying without the blood sugar spike of refined flour

Together, these ingredients check every box: sustained energy, skin-supportive nutrients, and they happen to taste delicious.

Dr. Karam's Daily Chocolate Protein Cookies

Ingredients

  • 6 ripe bananas
  • 1 (16 oz) jar of almond butter
  • 2 scoops of chocolate protein powder
  • 2 handfuls of raw walnuts
  • 3 tbsp of coconut oil
  • 1 cup of almond flour
  • 1 cup of gluten-free oats
  • 1 cup of dark chocolate chips
  • Optional: Cocoa nibs and cocoa powder

Directions

  1. Preheat your oven to 350°F (175°C).
  2. Mash 6 ripe bananas in a large bowl until smooth.
  3. Add 1 whole jar of almond butter, 2 scoops of chocolate protein powder, 1 cup of almond flour, 1 cup of gluten-free oats, and 3 tablespoons of coconut oil.
  4. Mix until well combined.
  5. Fold in 2 handfuls of raw walnuts and 1 cup of dark chocolate chips. For an extra boost, consider adding cocoa nibs and cocoa powder.
  6. Scoop the cookie dough onto a baking sheet lined with parchment paper, shaping them into cookies.
  7. Bake for 20 minutes, or until the cookies are set and lightly golden.
  8. Allow the cookies to cool before enjoying.
  9. Pro tip: We store them in the freezer during the week. It keeps them from getting stale, and makes it an easy grab-and-go snack for later in the day.

Is Protein Really That Important for Skin Health?

Short answer: yes - and it's underrated in most skin conversations.

Collagen, the structural protein that keeps skin firm, plump, and youthful, is continuously being broken down and rebuilt. Your body needs a consistent supply of dietary protein to keep that process running efficiently. When protein intake is chronically low, collagen synthesis slows, and the visible signs are real: skin that loses its firmness, slower healing, and reduced elasticity over time.

Protein also plays a role in melanin production, which affects not just skin tone but how effectively your skin protects itself against UV damage.

I eat one of these cookies every single surgery day. Not because I'm counting macros, but because I've found that consistent, high-quality protein intake, along with healthy fats and stable carbohydrates, is one of the most reliable ways to sustain energy and support the systems that keep your skin looking its best.

How These Cookies Support My Routine

We make a batch every weekend. It takes maybe 30 minutes, and it covers me for the entire week. One cookie between surgeries is enough to keep me alert and energized without feeling heavy or sluggish. 

If you're looking for a way to add more protein and skin-supportive nutrients to your diet without overthinking it, this is as practical as it gets. You can make them in bulk, they freeze well, and they taste great.

The most important thing I've learned over the last two decades of turning healthy habits into a lifestyle is this: if you want to stay consistent, you have to make it easy. Remove the friction, remove the excuses. This recipe is an example of that in action.

This video is amazing and so informative! I’m 70 years young and have been using Trifecta over 2 years. I realize I do have some aging going on but I get compliments all the time on my face. I exercise daily and try to eat healthy. Have joined a new gym with a sauna and cold plunge. Love the sauna but working on getting in the cold plunge!

Such an inspirational video! You walk the talk and your routine IS attenable. I am from the generation that never wore sun protection. I tanned all the time so I have decades of skin damage and lost elasticity. In addition, I had cystic acne with sebaceous skin (sadly, pre Accutane era). I have subscribed to Trifecta for almost a year and it has been such a pleasure to use! I have seen improvement in my old, sun damaged face. My skin will never be considered “great” due to the genetic and environmental issues described, but it is the nicest version of my skin I have experienced!
